Jim's Fish Recipe No.1




Smoked Haddock and Spuds

ingredients: 2 portions

450 grams smoked haddock skinned and boned
1 large onion
2 legs of celery
3 medium boiling potatoes
olive oil
knobs of butter
500 ml fresh milk
2 dash's fresh cream
salt n pepper

Method:

Boil potatoes ready for mashing. While that's happening medium heat olive oil in a pot, add a knob of butter and sweat off onions and celery.

Add milk and dash cream and bring slowly to a gentle boil. simmer for 6 minutes.

Add smoked haddock. Simmer for 8 minutes (or longer) stirring occasionally. season with salt & pepper.

Drain the spuds when cooked nicely. add a knob of butter and a dash of cream. season with salt and pepper. Mash the spuds till creamy and fluffy. NO LUMPS!

Serve in a bowl, eat with a spoon.
